Mojito

Traditionally, a mojito is a cocktail made with white rum, sugar, lime juice, soda water, and mint. It is not traditionally a frozen drink, but I love frozen fruity drinks, so I had to go there. My Frozen Blueberry Mojito has many of the same ingredients and can be made as a mocktail or a cocktail. I did leave out the soda water because it wasn't necessary in this frozen version.

I added a simple blueberry syrup for a fun twist, and I feel the blueberry, mint, & lime flavors work really well together. This is a refreshing drink everyone can enjoy. It will cool you off and leave a refreshing flavor behind too. I hope you love it as much as I do!

Blueberry Simple Syrup

This recipe is very easy to make. First start by making a simple blueberry syrup using fresh blueberries, water, and sugar

Whisk the ingredients together over mid-low heat until the sugar is dissolved and then increase the heat to medium and simmer at a gentle boil for about 15 minutes, stirring often, until the mixture thickens into a syrup. Whisk in 1 teaspoon fresh lemon juice and chill in fridge until ready to make the mojitos.

When ready to make the mojitos, Put 1/2 cup blueberry simple syrup, 2 tablespoons fresh lime juice, 2-3 mint leaves, and 1 cup ice in the jar of a blender. Blend on high speed until the ice is crushed and mixture is the consistency you like. Give it a taste and adjust the flavors to your liking. Add more ice if you like an even thicker mixture. Garnish with fresh mint leaves and wedges of lime. Serve immediately.

Frozen Blueberry Mojito is made with fresh ingredients to maximize flavor. This refreshing mocktail can be enjoyed by all ages or you can add rum for an adult only party. Either way it is fruity and delicious!

Ingredients

Blueberry Simple Syrup

  • 1 cup Fresh Wish Farms blueberries
  • 1 cup water
  • 1 cup sugar
  • 1 teaspoon lemon juice

Individual Frozen Blueberry Mojitos

  • 1/2 cup blueberry simple syrup
  • Juice of 1 fresh lime (about 2 tablespoons)
  • 2-3 fresh mint leaves
  • 1 cup of ice
  • Slices of lime for garnish
  • Fresh mint leaves for garnish

Instructions

  1. To make the blueberry simple syrup whisk 1 cup blueberries, 1 cup water, and 1 cup sugar in a small saucepan over mid-low heat until sugar is dissolved. This will take about 5 minutes.
  2. Once sugar is dissolved, increase heat to medium and bring to a gentle boil. stirring often, until syrup thickens. This should take about 15 minutes. Add in 1 teaspoon of fresh lemon juice and stir to combine. Chill until ready to use. NOTE: Most of the berries will reduce into the syrup. If you have some berry chunks left in the syrup it's ok. They will be mashed up in the blender when making the frozen mojito. If you have blueberry syrup leftover it is also delicious over pancakes or waffles.
  3. To make individual Frozen Blueberry Mojitos combine 1/2 cup blueberry simple syrup, the juice of 1 fresh lime (about 2 tablespoons), and 2-3 mint leaves with 1 cup of ice. Blend on high speed until the ice is crushed and mixture is the consistency you like. Give it a taste and adjust the flavors to your liking. Add more ice if you like an even thicker mixture.
  4. Garnish with fresh mint leaves and wedges of lime. Serve immediately.
  5. To make this a cocktail add 2 ounces of rum and and extra 1/2 cup of ice. Enjoy!
Yield: 4-6 servings
Prep Time: 20 mins.
Total time: 20 mins.
